Hearty good for you! Tofu is good for your heart, but not loved by all. This recipe will help get tofu into any picky households menu. Even my kids love this dinner.

It is quick to make (about 15 minutes), offers a plethora of textures for your mouth and is packed with nutrients that help keep your heart healthy and your body feeling young.



1 ½ cups of cubed tofu

1 tbsp. peanut oil

1 clove garlic, sliced

1 cup of broccoli, chopped

1 cup of fresh kale, washed

1 small red pepper, sliced

6 fresh mushrooms, sliced

2 tbsp peanut butter

3 tbsp hot water

1 tsp tamari (or soy) sauce

½ tsp cayenne pepper



Makes 2 servings. In a large frying pan over medium heat, warm the oil. Add in garlic and sauté for 2 minutes. Add in tofu and sautee, ensuring to move cubes around so they cook evenly. When the tofu appears to be getting a bit firm, add in broccoli and sauté for 2 to 3 minutes. Add in remaining vegetables to the pan and sauté for about 2-4 minutes. Add a splash of hot water, soy sauce, ground cayenne pepper and peanut butter. Stir well. Remove from heat and let sit for a few minutes before serving. Dig in and show a little love to your heart!
