Quite possibly the prettiest salad I have ever created this beet, apple, pear, mint salad is earthy, tart and sweet all in one refreshing bite. It’s the kind of salad that makes you want seconds.

Gorgeous enough to make you smile, this salad is a serious crowd pleaser, commonly impressing guests even before they’ve tasted it.

What’s the healthiest salad?

There is more to this salad than a pretty looking bowl. It may be one of the healthiest salads (outside of those containing dark leafy greens of course). Actually, between you and me, any salad is pretty healthy if it’s made up of mostly plants – it is best to avoid salads topped with greasy meats, or creamy dressings. The fruits, vegetables and leaves in this gorgeous beet salad are packed with antioxidants and other anti-aging nutrients. From quercetin to vitamin C, fibre to potassium, beets are packed with nutrients. And, if you have yet to try them raw you are seriously missing out. Raw beets are crispy in texture with a mild earthy flavour that pairs well with the sweet apples and pears in this dish. As for those apples and pears, they are ranked as some of the top  sources of flavonoids, great anti-aging nutrients, according to the Baltimore Longitudinal Study. Results from the study published in 2011, linked lower rates of chronic disease and inflammation to eating high flavonoid foods often. Who would like seconds?

What to do with beets?

Whenever possible I love to make this salad with rainbow beets to add some extra colour. Yellow or golden beets offer a bright touch to the dish. Red beets have a powerful impact beside the bright green mint leaves. Together these two flavours may just blow your mind – it’s a truly amazing sensation in your mouth.

Quick salad for dinner

The salad is very easy to make, including the dressing. I literally can make this salad in under 5 minutes – that’s a real must in our busy lives. Yes, that’s even with a homemade dressing. It’s a simple combination of lemon and olive oil keep the apples and pears looking white and bright, and offer a light tart flavour to counter balance the earthy beets.

Enjoy this salad for lunch, dinner or serve it at your next function and watch your guests’ jaws drop in amazement at it’s brilliant colours.
