Here is my favourite go-to lunch that is packed with energizing vitamins and minerals, as well as antioxidants to help fight off all the stress we encounter in a day.
Plus, it requires “zero” culinary ability to make, and can be made in less than 10 minutes. A delicious, energizing lunch (for all week) is just a few minutes away.

Allison’s Energizing Gazpacho
- 2/3 cup extra virgin olive oil
- 1 big garlic clove
- 1 small hot pepper of choice (e.g. red chilli, jalepeno)
- 4 green onions
- 1 – 1/2 lbs tomatoes (local organic cherry tomatoes are the sweetest and my favourite)
- 1/2 red bell pepper
- 1/2 cantaloupe
- 1/2 cucumber
- 1 slice of whole wheat bread
- 10 basil leaves
- 1 tbsp sherry vinegar
- Salt & Pepper
Blend or process garlic, olive oil, hot pepper and green onions. Option: add bread to thicken soup. When well blended, add tomatoes, cantaloupe, cucumber and bell pepper. Option: roast the bell pepper for a more distinct flavour. Blend until you reach the consistency desired. Blend in any additional flavours if desired including salt, pepper, basil or sherry vinegar. Refrigerate and enjoy an energizing delicious soup anytime you need it – it’s nutrition in real life.
